There are lots of cauliflower-haters out there. Personally, I’ve always been a little indifferent toward it. But, it’s cauliflower season and I was determined to make it delicious. This is so good. No really. A little roasting and browning makes everything tastier, so tasty in fact that I was eating this with my fingers… and I caught my husband eating the browned bits off the pan in the kitchen after dinner.
Ingredients
- 1 head of cauliflower
- 2 cloves garlic, minced
- 3T cilantro, chopped
- 2T olive oil
- 1/2t cumin
- generous pinch of cayenne pepper (optional)
- squeeze of lime
- salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees. Grease a baking sheet.
- Cut cauliflower into bite-size florets. Place into a bowl and toss with the rest of ingredients. Season generously with salt, then pepper.
- Pour cauliflower onto baking sheet and spread into a single layer.
- Roast in oven for 25-30 minutes or until cauliflower is tender and caramelized, stirring once.
