Roasted Cauliflower with Cumin, Cilantro, & Lime

There are lots of cauliflower-haters out there. Personally, I’ve always been a little indifferent toward it. But, it’s cauliflower season and I was determined to make it delicious. This is so good. Roasted Cauliflower with Cumin, Cilantro, & Lime

Yields: 2-4 servings

  • 1 head of cauliflower
  • 2 cloves garlic, minced
  • 3T cilantro, chopped
  • 2T olive oil
  • 1/2t cumin
  • generous pinch of cayenne pepper (optional)
  • squeeze of lime
  • salt and pepper, to taste

Preheat oven to 400 degrees. Grease a baking sheet.

Cut cauliflower into bite-size florets. Place into a bowl and toss with the rest of ingredients. Season generously with salt, then pepper.

Pour cauliflower onto baking sheet and spread into a single layer.

Roast in oven for 25-30 minutes or until cauliflower is tender and caramelized, stirring once.
