Olive Oil & Rosemary Popcorn

You know that rosemary bread they bring to every table at Macaroni Grill? The round loaf with the sea salt on top and the extra virgin olive oil on the side for dipping? It’s irresistible stuff. That’s what this popcorn tastes like. Olive oil, rosemary, garlic, sea salt and pepper all drizzled over steamy, freshly-popped popcorn… just as irresistible as the famous bread.

You might remember back in December when I shared my secret about making popcorn at home in brown paper lunch sacks. Everyone seemed to love the tip, so I’m making sure to share it again here. Take 1/4c unpopped popcorn, pour into a standard lunch-size brown paper bag, fold bag twice, lay fold side down in microwave, cook 1 min, 45 seconds (or so). Presto! Homemade, fresh popcorn you can season any way you like at a fraction of the price of store-bought. Works every time.

And, as a little bonus… a little taste of Alaska: the view of the Northern Lights from our back deck last night. Enjoy.

Olive Oil & Rosemary Popcorn

  • 1/4c unpopped popcorn, popped in brown paper bag (directions above in blog post)
  • 2T olive oil
  • 1/2t garlic powder
  • 1/2t rosemary
  • 1/2t sea salt
  • 1/4t pepper

Put popped popcorn in a large bowl.

In a small bowl, mix together oil and seasonings until well combined. Drizzle over popcorn. Stir popcorn with your hands until popcorn is well coated. Taste for seasoning (add more salt as desired).
