Watermelon always reminds me of the 4th of July. There’s nothing quite like a fresh, juicy watermelon on a hot summer’s day.

Watermelon Lime Popsicles via Alaska from Scratch

Except perhaps an ice cold, homemade Watermelon Lime Popsicle. Up here in Alaska, I’ve found this to be a perfect way to stretch my $10 watermelons into something fresh and tasty that will last much more than a couple of days. This recipe is extremely simple, with only a few ingredients, and the watermelon flavor really shines through. It tastes like summer on a stick.

Watermelon Lime Popsicles

  • 4c watermelon, cut into 1-inch cubes
  • Juice of 1 lime
  • 1/4c sugar (or more to taste according to the sweetness of your melon)
  • popsicle mold and popsicle sticks

Toss watermelon, lime juice, and sugar into a blender. Whirl until smooth. Taste for sweetness. Add more sugar if needed. Pour into popsicle mold and freeze according to manufacturer's instructions.
