Pumpkin Pie Breakfast Smoothie via Alaska from Scratch

As you may have heard me mention before, we don’t have any smoothie shops in our part of Alaska. When we lived in California, there always seemed to be a smoothie place within 15 minutes of wherever we were. And in the fall, I would always get the pumpkin smoothie. Because, as we all know, I’m a sucker for anything pumpkin.

I love that this smoothie has oatmeal in it. It makes the smoothie thicker, healthier, and more filling. Not to mention it’s the ingredient that classifies this as a “breakfast smoothie.” But, don’t let the name stop you from drinking this any blessed time of the day (hint: I served it to my kids for dessert one night and they all thought it was like drinking pumpkin pie).

Pumpkin Spice Breakfast Smoothie

Yields: 2 servings

  • 1/2c pumpkin puree
  • 2T pure maple syrup
  • 1 frozen banana
  • 1/2c old-fashioned rolled oats (not instant)
  • 1 graham cracker, crumbled
  • 1-1/2t [pumpkin pie spice|http://alaskascratch.wpengine.com/2012/09/21/pumpkin-pie-spice-mix/]
  • 1-1/4c milk of your choice (soy or almond are delicious options)

Add all of the ingredients to a blender and whirl on high until smooth and well-combined. Add more milk as needed until desired consistency is reached. Pour into glasses and sprinkle with a little more pumpkin pie spice on top. Drink with a straw.
