Meyer Lemon Buttermilk Waffles

Happy Valentine’s Day! I brought you some breakfast in bed. Bright, sunshiny Meyer Lemon Buttermilk Waffles dusted with powdered sugar and finished with a squeeze of fresh Meyer lemon juice on top.

Meyer Lemon Buttermilk Waffles

Tangy, golden buttermilk waffles infused with the brightness of Meyer lemons. Adapted from [Damn Delicious|http://damndelicious.tumblr.com/post/42416630249/lemon-belgian-waffles-with-blueberry-syrup]

Yields: 3-4 waffles

  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1/2 cup milk
  • 4 tablespoons butter, melted
  • 2 eggs
  • 1 tablespoon sugar
  • 2 tablespoons Meyer lemon juice, freshly squeezed
  • 1 tablespoon Meyer lemon zest
  • For Serving:
  • powdered sugar
  • Meyer lemon wedges
  • butter
  • pure maple syrup

Preheat your waffle iron.

In a mixing bowl, combine the flour, baking soda, and salt. In another bowl, whisk together the buttermilk, milk, melted butter, eggs, sugar, and lemon juice and zest. Pour mixture over the dry ingredients and whisk together until smooth.

Spoon batter into your waffle iron as directed by manufacturers instructions. Cook until golden brown, crisp, and cooked through (in my waffle iron, that's about 4 minutes). Serve waffles immediately with powdered sugar and lemon wedges, with butter and syrup on the side.
