In recent weeks, things have been shifting suddenly and rapidly behind the scenes in the food blogging industry. Google made major changes to its algorithm and ad networks have begun using something called Viewability: new criteria to measure blog performance. (If you are a food blogger and are interested in learning more about this thing called Viewability, Pinch of Yum has a thorough explanation in this post).  These shifts in the backend world have necessitated some changes on the front end to make Alaska from Scratch perform better overall for everyone. I predict you will be seeing gradual changes on many of your favorite blogs in months ahead.

I have been working hard to help make the transition to our new space as smooth as possible; we appreciate your patience while work out some of the kinks. Today, I have on offer a ridiculously crave-worthy and simple summer snack, appetizer, or side dish, ideal for backyard barbecues and 4th of July celebrations – Chile Lime Watermelon Wedges with Cilantro. Salty, spicy, acidic, sweet, juicy, refreshing, surprising watermelon wedges. You won’t be able to stop yourself from eating five at a time. I know from personal experience.

 

In order to make your summer watermelon even more addicting than it already is, you’re going to need a bottle of this stuff right here. Tajin Clasico Seasoning. It’s coarse salt, red chiles, and lime. If we can find it here in Alaska at our local Safeway, I can bet you can find it in the latin foods section of most of your local stores as well. It’s equally fantastic on fresh mango slices and pineapple, too. In fact the inspiration for this dish came from trips down to Baja Mexico in our college days in San Diego, where you can buy a fresh handful of mango slices with chiles, salt, and a squeeze of lime. Heaven, I tell you.

Chile Lime Watermelon Wedges with Cilantro

Surprisingly salty and spicy, these Chile Lime Watermelon Wedges with Cilantro will disappear quickly at any summer gathering.

Yields: 12 wedges, serves 4-6

  • 12 watermelon wedges, chilled
  • 1 lime
  • [Tajin Clasico Seasoning|http://www.tajin.com/en-us/clasico-polvo], to taste
  • ¼ cup cilantro, finely chopped

Rub the top side of each watermelon wedge with a slice of lime, squeezing the lime gently as you go. Season the top of each watermelon wedge generously with Tajin seasoning, to taste. Sprinkle cilantro over all the wedges. Place the watermelon wedges on a serving platter and serve promptly or refrigerate until ready to serve.
