Chicken Salad with Dried Cherries & Pistachios

A family member is here for a visit and, in thinking about what to make us for lunch, I came up with this yummy and versatile chicken salad. Sweet-tart cherries, the crunch of salty pistachios, and some other fun goodies make for delightful little surprises in every bite. This isn’t your standard chicken salad. And, you can serve it up so many ways – on top of greens for a salad, on bread or croissant for a delicious sandwich, a heaping spoonful in half of an avocado, or on crackers for a light snack.

Chicken Salad with Dried Cherries & Pistachios

Yields: 4 servings

  • 2 chicken breast halves, cooked and chopped
  • 1/2c green onions, sliced
  • 1/2c tart apple, chopped
  • 1/4c pistachios, shelled and roughly chopped
  • 1/3c dried cherries
  • 1t poppy seeds
  • 1/4c mayonaise
  • 1t dijon mustard
  • 1/4t salt
  • 1/4t black pepper

In a bowl, mix all ingredients together until fully combined. Cover and chill in refrigerator at least one hour before serving.
