Weather: 0 degrees, very light sprinkling of snow

My mother-in-law is here for a visit and, in thinking about what to make us for lunch, I came up with this yummy and versatile chicken salad. Sweet-tart cherries, the crunch of salty pistachios, and some other fun goodies make for delightful little surprises in every bite. This isn’t your standard chicken salad. And, you can serve it up so many ways – on top of greens for a salad, on bread or croissant for a delicious sandwich, a heaping spoonful in half of an avocado, or on crackers for a light snack.

This looks fabulous. I'm so excited to give this a try, mainly because I have 90% of the ingredients right in my pantry. Plus it looks so easy. I might just put this on a croissant and enjoy it as a sandwich. Thanks for sharing such a wonderful recipe!

It was fabulous. It actually tasted better as leftovers since the flavors were really able to meld together.
