What I’m listening to: the chirp of five baby chicks
I made this fabulous summer salad along with dinner while my in-laws are visiting, but I couldn’t come up with a name for it. So, I set up a recipe naming contest on Facebook, Twitter, and Instagram with a photo of the salad asking fans to help me name it. It was great fun. Thank you to my reader, Ramona, for her “Just Peachy” suggestion! And thank you to everyone who played along. Be looking forward to more recipe naming opportunities in the future.
At about 9 p.m., long after dinner was over and the dishes were clean, I heard Pastor Alaska rummaging through the kitchen. Then he asked, “Is there any more of that salad?” Nope, it was all gone!
I was thrilled with how the flavors in this salad came together. Tender baby greens, sweet peaches, crisp red onions, crunchy almonds, and salty feta all drizzled with a homemade honey vinaigrette. It’s a fresh and healthy way to use those ripe summer peaches.
Ingredients
- 8oz baby spring mix greens
- 1 large peach, thinly sliced
- 1/4c red onion, thinly sliced
- 1/4c sliced almonds
- 1/3c crumbled feta cheese
- 2T apple cider vinegar
- 1T freshly squeezed orange juice
- 1T honey
- 1/4t poppy seeds
- 1/4c olive oil
- salt and pepper
Instructions
- Add greens to a salad bowl. Scatter peaches on top, followed by onions, nuts, and cheese.
- In a small bowl, whisk together all the dressing ingredients until well combined. Drizzle over salad. Toss and serve promptly.
