Peanut Butter Popcorn

We love family movie night at our house – kids in pajamas all cozied up on the couch together to watch one of their favorite movies. We also love freshly popped popcorn to go with our family movie night. However, I despise the smell of burnt popcorn. How is it that a few measly seconds in the microwave can mean the difference between buttery deliciousness and utter disgustingness? You step away from the microwave for a moment, to put away a few dishes or to get one of your kids something to drink, and the next thing you know, the popcorn is burnt. Even if you pop another bag, the whole house still stinks of the popcorn-gone-wrong. IMG_6404 This particular movie night, I popped our Pop Secret popcorn using the Perfect Pop app and then coated it in this easy salty sweet peanut butter glaze. Amazing. Everyone loved it with the exception of my middle child who is a bit of a popcorn purist and prefers his popcorn simply with butter and salt. 

Peanut Butter Popcorn

Salty sweet popcorn with an easy and delicious peanut butter glaze. Adapted from [The Kitchn|].

Yields: 4 servings

  • 1/4 cup popcorn kernels (like Pop Secret Jumbo Popping Corn), popped and unpopped kernels removed
  • 1/4 cup honey
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla
  • 1/4 cup creamy peanut butter
  • fine sea salt

Add popped popcorn to a large bowl. To a small saucepan over medium heat, add the honey and sugar. Let simmer about two minutes or until the sugar is dissolved. Remove from heat and quickly add the vanilla and peanut butter, stirring until smooth. Drizzle over the popcorn and toss to coat. Season with sea salt to taste. Let the glaze set for 5-10 minutes before serving.
