English Muffin Turkey Melts via Alaska from Scratch

This is recipe number three for English Muffin Week! Although many people would automatically say English muffins are a breakfast food, here is another fabulous and quick lunch or light dinner option.

English Muffin Turkey Melts via Alaska from Scratch

You take a toasted English muffin, smear on some garlic mayo (or an herbed cream cheese would also be yummy), top with turkey slices, grated cheddar cheese, red onion slivers, and salt and pepper.

Broil until hot and melty, then top with fresh avocado. And, just like yesterday’s English Muffin Pizzas, these melts are completely customizable – you can choose different sauce, meat, cheese, and veg and come up with your own English Muffin Melt options.

English Muffin Turkey Melts

Yields: 2 turkey melts

  • 1 English Muffin, fork split and toasted
  • 1T mayo
  • 1/2t fresh minced garlic
  • 6 slices turkey lunchmeat
  • 2T cheddar cheese, grated
  • red onion, thinly sliced
  • salt and pepper
  • ripe avocado slices

Preheat broiler. Place toasted English muffins halves on a baking sheet.

Mix together the mayo and garlic. Spread mayo onto each muffin half. Top with turkey, cheese, and onion. Season with salt (sparingly, as lunchmeat is already salty) and pepper.

Broil until cheese is melted and lightly browned, about 2 minutes (give or take, watch carefully).

Top with avocado slices and serve.
