Some of you asked for suggestions on how to prepare the butternut squash you have sitting on your counter tops this time of year. This is my take.
Now, make sure you have a good peeler and a sharp knife. Prepping the squash for roasting is the hardest part and you will get frustrated if you have a dull knife. It’s oh so worth it. Also, I splurged and bought some Cotija cheese for these tacos because the saltiness of the Cotija is perfect to offset the natural sweetness of the squash. Mmmm these are deelish. I ate three.
